ZUCCHINI BREAD 
1 c. chopped walnuts
4 eggs
2 c. sugar
1 c. vegetable oil
3 1/2 c. unsifted flour
1 1/2 tsp. baking soda
1 tsp. vanilla
1 tsp. salt
1 tsp. cinnamon
3/4 tsp. baking powder
2 c. zucchini
1 c. raisins
(Can substitute chocolate chips for raisins)

Beat eggs. Gradually add sugar and then oil and add dry ingredients mixed together to eggs, alternating with zucchini. Stir in raisins, walnuts and vanilla.

Put the complete mixture into 2 greased, lightly floured 9 x 5 x 2 3/4 inch pans. Bake at 350 degrees for 55 minutes or until springs back. Stand 10-15 minutes. Turn over on wire racks to cool.
