PIMENTO CHEESE 
4 c. (16 oz.) shredded Colby cheese
4 oz. diced pimentos
1 c. mayonnaise
6 pimento stuffed olives (diced)
3/4 tsp. lemon pepper seasoning
1/2 tsp. minced onion

Combine all ingredients, stir well. Cover and chill. 2 1/2 cups.
