FRUITED CORNED BEEF 
About 5 lb. corned beef round
Cold water
Whole cloves
1/2 c. brown sugar
1/4 c. finely ground dry bread crumbs
1/2 tsp. dry mustard
Grated peel & juice of 1 med. sized orange
Grated peel & juice of 1 lemon
1 c. cider or sherry

Cover meat with cold water; bring to a boil and remove scum. (If beef seems very salty, pour off water and add fresh.) Simmer slowly 3 hours, or until just barely tender. Cool in the cooking liquid.

Place drained corned beef in baking pan; score fat and stud with cloves. Combine brown sugar, crumbs, mustard and grated orange and lemon peels. Pat meat with crumb mixture.

Place in a 350°F oven to brown slightly. Baste frequently with a mixture of the orange and lemon juices and cider. Continue baking 30 minutes or until heated through. Slice to serve. Serves 8-10.
