CORNED BEEF WITH APRICOT GLAZE 
7 to 8 lbs. corned beef
2 med. onions
2 stalks celery
12 peppercorns
12 whole cloves
2 bay leaves

GLAZE:

1 sm. jar apricot preserves
2 tbsp. brown sugar
1 1/2 tsp. dry mustard

Put all ingredients (except glaze) in a crock pot or in a large pot on the stove and cover with water (use less water in crock pot). Cook until corned beef is tender. Mix ingredients for glaze together and simmer on stove top until preserves are melted and sauce is smooth. Serve glaze over corned beef.
