MICROWAVE CHICKEN KABOBS 
2 lbs. boneless chicken breasts, cut into 1 inch cubes
1/2 lb. fresh mushrooms or 8 oz. can mushroom caps
2 green peppers, cut into 1/2 inch cubes
3 fresh tomatoes, quartered or cherry tomatoes

MARINADE:

1/3 c. soy sauce
1/8 tsp. pepper
1/4 tsp. fresh or ground ginger
1 tbsp. sugar
1/4 tsp. garlic powder
3 tbsp. honey

In a medium bowl, place all marinade ingredients except honey. Mix well and add chicken. Marinate at least 1/2 hour or longer. On wooden skewers alternate chicken, green peppers and tomatoes and mushrooms. Add honey to remaining marinade and brush on kabobs. Microwave on High for 8 to 10 minutes or 1 1/2 minutes per kabob if cooked separately.

Since microwave ovens vary in power, you may need to adjust your cooking time.
