ZUCCHINI BREAD 
3 eggs, beaten
2 1/2 c. sugar
1 c. Crisco oil
1/2 tbsp. coconut flavoring
2 c. peeled zucchini, grated
1 c. nuts, chopped
3 c. self-rising flour
3 tsp. cinnamon
1 tbsp. vanilla

Mix all ingredients and cook at 350 degrees in 3 well greased and floured loaf pans. Bake for 45 to 50 minutes or until done.
