QUICK QUICHE 
2 c. leftover cooked meat (poultry, fish, sausage, or vegetable mixture)
1/2 c. diced onion
1/2 tsp. salt, optional
1 c. shredded Swiss cheese (about 4 oz.)
1 1/2 c. milk
3/4 c. biscuit mix
3 eggs

Heat oven to 400 degrees. Lightly grease 10 inch pie plate. Sprinkle meat or vegetables, onions, cheese in plate. Beat salt, milk, biscuit mix and eggs together. Pour mixture into plate until smooth.

Bake until golden brown and knife inserted into center halfway comes out clean (30 to 35 minutes). Let stand 5 minutes before cutting. Refrigerate remaining pie. Reduce temperature to 375 degrees if using glass plate.

Can be baked in individual muffin pans but will look like a popover when done.

Makes 4 large main dish servings.
