RATATOUILLE FOR THE LAZY 
Olive oil
1 eggplant, sliced
Tomato, peeled and sliced (better if canned or frozen)
1 green pepper, sliced
1 onion, sliced thinly
Garlic salt
Pepper
Lemon juice
Parmesan cheese

Grease the inside of a casserole with olive oil. In dish, layer eggplant, tomato, green pepper, and onion. Sprinkle each layer with garlic salt, pepper, and lemon juice. Top with Parmesan cheese. Bake, covered, at 375 degrees for 45 minutes.
