MEXICAN LASAGNA 
1 1/2 lb. beef hamburger
1 med. onion chopped
1 clove garlic, minced
1 lb. canned tomatoes
1 (8 oz.) tomato sauce
1/2 lb. Jack cheese
1/2 c. shredded cheddar cheese
4 oz. chopped olives (black)
10 oz. enchilada sauce
1 egg
1/2 lb. Ricotta cheese
1 box noodles

Brown the hamburger, onion, and garlic; add tomatoes, tomato sauce, and 1/2 can enchilada sauce. Salt and pepper to taste. Mix egg with Ricotta cheese. Layer in cake pan noodles, meat, Ricotta cheese, grated cheeses, and olives on top.
