1 c. bran flakes 40% or Raisin Bran cereal 1 c. quick Quaker oats 1 c. sugar 1 c. flour 1 tsp. baking soda 1/2 tsp. salt 1 egg, beaten 1 c. milk (add 1 tbsp. vinegar to make sour, let stand few minutes after mixing) Mix ingredients gently with a spoon. Do not use an electric mixer or blender. Grease a loaf pan with butter generously and pour mixture into pan. Bake for 50-60 minutes at 350 degrees. Remove from pan after letting it cool for 5-10 minutes. Place on cake rack to let cool. Serve with cream cheese and marmalade if desired, or with just butter. Freeze if desired for future use. Remove from loaf pan quickly or it will stick and might crumble. |
