SHORTCAKE (FOR STRAWBERRIES) 
2 c. flour
3 tsp. baking powder
1/2 c. oil
1 egg, slightly beaten
1/2 c. sugar
1/2 tsp. salt
1/3 c. milk

Sift dry into bowl. Stir in wet ingredients, all at once. Turn dough onto lightly floured surface and knead gently 8-10 times. Pat into rectangle or cut into large cookie rounds. Put on cookie sheet to bake at 400 degrees for 10-12 minutes. Serves 6 to 8.

NOTE: Pat out 1/2 inch thick and cut through after baking and butter one cut side or, pat thin, brush part with butter and put remaining on top before baking. Serve while still warm with sweetened cut-up berries and whipped cream or ice cream. Serves 6 to 8.
