TENDERLOIN PARMEGIANA 
2 or 3 tenderloins
1 egg
1/2 tsp. s. salt
1/4 tsp. pepper
1/2 c. bread crumbs
2 tbsp. oil
1 (15 1/2 oz.) jar spaghetti sauce
1/4 c. Parmesan
2 sl. Mozzarella cheese

Beat egg; add salt and pepper. Dip pork into egg mix, then in crumbs. Brown on both sides in oil. Place in shallow pan. Pour spaghetti sauce over it. Sprinkle with Parmesan.

Bake, covered at 350 degrees for 30 minutes. Remove cover. Top with Mozzarella. Cook 10 minutes or until cheese melts and meat reaches 170 degrees.
