POTATO PANCAKES 
4 lg. potatoes
1/2 c. grated cheese
1 heaping tbsp. butter
2 eggs, beaten
Salt, pepper to taste
1/2 c. flour
3/4 c. olive oil

Boil and mash potatoes. Transfer to large bowl. Add butter; cool. Add eggs and cheese, stirring until combined. Add salt and pepper to taste.

Mold into patties. Pat firmly in flour. Fry in very hot oil until golden brown on both sides. Serves 7-8.
