SHARON'S OATMEAL CAKE 
1 c. quick oats
1 1/4 c. boiling water
1/2 c. (1 stick) butter
1 c. light brown sugar
1 c. white sugar
2 eggs
1/4 tsp. cinnamon
dash of nutmeg
1/4 tsp. salt
1 1/3 c. all-purpose flour
1 tsp. baking soda

Mix oats with boiling water. Let cool 20 minutes. Mix butter, sugars, eggs and spices. Add oats mixture. Add flour and baking soda. Mix lightly. Grease and flour 11x13-inch pan.

Bake at 350°F for 35 to 40 minutes.

Icing:

4 tbsp. (1/2 stick) butter
1/2 c. brown sugar
1 1/2 c. coconut
1 tsp. vanilla
1/3 c. cream or condensed milk
1/2 c. chopped pecans

Mix icing over medium heat until butter melts and sugar dissolves. Spread on cake after it is done and place under broiler for 1/2 minute or until bubbly and light brown.
