OATMEAL CAKE 
1 1/4 c. boiling water
1 c. oatmeal
1/4 lb. butter
1 c. brown sugar
1 c. white sugar
2 eggs
1 1/3 c. flour
1 tsp. baking soda
1/4 tsp. salt
1/2 tsp. nutmeg
1 tsp. cinnamon

Add oatmeal to boiling water. Add butter and cover pan. Set aside dry ingredients. Mix sugars and eggs in large bowl. Add dry ingredients to mixture and stir well. Add oatmeal mixture and stir well. Pour mix into 13 x 9-inch pan that has been sprayed with cooking spray.

Bake at 350°F for 25 minutes.

Frosting:

1/4 c. evaporated milk
1 c. coconut
2/3 c. brown sugar
1/4 lb. butter
1/2 tsp. vanilla

Mix over low heat until boils. Pour over cake and return to oven 3 to 5 minutes until bubbly around edges.
