OATMEAL CAKE 
1 1/4 c. boiling water
1/2 c. (1 stick) butter
1 c. quick oats (instant)
1 c. brown sugar
1 c. white sugar
2 eggs
1 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. vanilla

Mix water, butter, oats and heat until butter melts. Add remaining ingredients.

Bake at 350°F for 30 to 35 minutes in 13x9x2-inch pan.

Icing:

1 c. brown sugar
1/2 c. canned milk
4 tbsp. butter
1 cup coconut, optional

Combine icing ingredients and spread on hot cake. Broil until bubbly. Or heat in pan and pour over cake.
