PINEAPPLE CAKE WITH GINGER CREAM
CHEESE FROSTING
 
2 eggs
2 c. all-purpose flour
1 c. brown sugar
1 c. chopped nuts
20 oz. can crushed pineapple, undrained
1 c. granulated sugar
2 tsp. baking soda

In a large mixing bowl, beat 2 eggs until light and fluffy. Add crushed pineapple, sugar, brown sugar, and baking soda. Mix by hand. Then stir in chopped walnuts. Spread evenly in an ungreased 9 x 13 inch pan. Bake at 350 degrees for 45 to 50 minutes. After cake cools, frost with the following:

3 oz. cream cheese
1 tsp. vanilla
1 tsp. ground ginger
1/4 c. butter
2 c. powdered sugar
