PICKLED BEETS 
5 lbs. raw beets
2 c. sugar
2 c. water
2 c. strong vinegar
1/2 tsp. cloves
1 tsp. allspice
1 tsp. cinnamon

Cook beets until tender. Dip in cold water. Peel and cut. Mix sugar, water, vinegar, cloves, allspice, and cinnamon. Pour over beets and boil 10 minutes. Pack and seal.
