FRESH PEAR CAKE 
4 c. fresh pears, ground or chopped fine
2 c. sugar
1 c. chopped nuts
3 c. flour
1/2 tsp. cinnamon or nutmeg
1/2 tsp. salt
2 tsp. baking soda
1 c. oil
1 tsp. vanilla
2 eggs, well beaten

Pare and core pears. Mix with sugar and nuts. Let stand for 1 hour. Stir often as mixture makes its own juice. Add dry ingredients to pears. Add oil, vanilla, and eggs. Do not use your beater, stir by hand. Pour into a well greased and floured tube pan. Bake at 350 degrees for 1 hour and 15 minutes. This cake will keep for a long time if wrapped and stored in the refrigerator. May freeze if desired.

@Ramie, in my experience, apples can be substituted for pears, and pears for apples, pretty much everywhere. Like shallots for onions. In both cases the result is slightly different, but still in some sense... equivalent. It's worth experimenting!
