SPINACH QUICHE 
1 sm. onion
1 box frozen chopped spinach
6 eggs
8 oz. cottage cheese
1 c. grated Muenster cheese
Salt and pepper

Saute onion until golden brown; set aside. Cook spinach for 5 minutes. Break spinach up with a fork until it is thoroughly defrosted. In large bowl mix together eggs, cottage cheese, grated Muenster cheese, salt and pepper. Add onion and spinach and mix well.

Place mixture into greased pyrex. Place a few pats of butter on top. Bake uncovered for 45 minutes at 350 degrees or until top is lightly golden brown.
