POTATO PANCAKE 
3 med. raw potatoes
2 eggs, separated
1 tsp. salt
1 1/2 tbsp. flour
1/2 tsp. baking powder
1 tbsp. fresh parsley

Grate potatoes and wring dry with cheese cloth. Add well beaten egg yolks. Stir in flour, baking powder, salt, parsley; mix well. Add whites "stiffly beaten" and fold. Cook in hot oil 1/4". Drop by tablespoon. Use 2 large tablespoons to turn over. Serve with spicy applesauce.
