POLISH POTATOES PANCAKES 
2 eggs
2 tbsp. flour
1 tsp. salt
1/4 tsp. pepper
1 lb. or 3 med. potatoes, poured and finely grated
3-4 tbsp. butter, melted

In medium bowl, beat eggs until thick and ivory colored, beat in flour, salt and pepper. Fold in potatoes. In 10 inch skillet over moderate heat, heat 2 tablespoons butter with tablespoon potato mixture in skillet and allow to spread by itself. Fry until brown on both sides. Makes 2 dozen. Serve with cream, fruit or syrup.
