OLD FASHIONED JAM CAKE 
Just as good as Grandma's but made with a simpler mixing method and topped with an easy Caramel Glaze.

3 cups all-purpose flour
2 cups sugar
1/4 tsp. salt
1/2 tsp. cinnamon and allspice
1 tsp. baking soda
1 cup (2 sticks) butter
5 eggs, beaten
1 cup favorite jam (blackberry is good)
1 cup buttermilk
1 cup raisins
1 cup chopped black walnuts

Mix all dry ingredients together and mix or beat well. Stir in eggs, buttermilk, nuts, jam, raisins and butter. Beat well. Grease and flour pans well. Can be baked in tube pan or make 3 layers in regular pan.

Bake at 350°F for about 50 minutes.

CARAMEL GLAZE:

1/4 cup (1/2 stick) butter
1/2 cup firmly packed dark brown sugar
1/4 cup milk
2 cups sifted confectioners' sugar
1 tsp. vanilla

Melt butter in saucepan over medium low heat. Stir in brown sugar; cook and stir 2 minutes. Add milk and continue cooking until mixture boils, stirring constantly. Remove from heat; gradually stir in confectioners' sugar. Add vanilla; blend well. Drizzle immediately over cooled cake.

Note: If glaze gets too thick, add a little more milk; blend well.
