CHRISTMAS VEGETABLE SALAD 
2 c. thinly sliced cauliflower
1/2 c. sliced stuffed green olives
1/3 c. chopped green pepper
1/3 c. chopped red pepper

DRESSING:

1 1/2 tbsp. fresh lemon juice
1 1/2 tbsp. white wine vinegar
4 tbsp. vegetable oil
1 tsp. salt
1/2 tsp. sugar
Freshly ground black pepper

Combine cauliflower, olives and peppers in a glass bowl. Pour dressing over all. Marinate in refrigerator for several hours or overnight. Put all dressing ingredients in a jar; shake well.
