SPANISH CHICKEN (MEXICAN) 
3 lb. chicken
1 sm. can diced green chilies
1 1/2 c. shredded cheddar cheese
1 can sliced black olives
Doritos or Fritos, crumbled
1 sm. can enchilada sauce

Place cut up chicken in 13 x 9 x 2 inch baking dish; bake at 400 degrees until done. Top with chilies, cheese and black olives. Cover with sauce and Doritos or Fritos. Bake 15 minutes at 350 degrees until cheese melts.
