POTATO PANCAKES 
6 med.-size potatoes
2 eggs
1 1/2 tbsp. flour
1/4 tsp. baking powder
1 1/4 tsp. salt
1 thinly sliced onion

Do not peel potatoes. Cut into 1 inch cubes. Combine remaining ingredients and 1/4 cup cubed potatoes in electric blender. Cover and blend. Add remaining potato cubes 1/4 cup at a time, as rapidly as possible. Lightly grease electric skillet; set at 380 degrees. Fry pancakes until tops bubble; turn and brown.

Yield: Approximately 10 pancakes.
