CHICKEN CROQUETTES 
2 c. chicken, cooked
1 tsp. minced onion
2 tbsp. water or broth
1 tsp. parsley
1/2 tsp. Accent (optional)
1 egg
Bread crumbs

Mix meat, water, onion, parsley and Accent (if using). Separate into croquette patties and chill until stiff. Roll in flour, then egg and water. Then roll in bread crumbs. Fry in deep fat (at about 365°F)

Season with salt and pepper while still hot.

Serve with sauce.

SAUCE:

3 to 4 tbsp. butter
4 tbsp. flour
1/4 tsp. salt
1 c. milk

Melt butter, add flour, milk and salt. Cook until thick and stir constantly.
