CHICKEN CROQUETTES 
2 tbsp. butter
2 tbsp. minced onions
6 tbsp. flour
1 1/2 c. chicken stock or milk
1/2 tsp. salt
Dash pepper
3 c. finely chopped chicken
1 egg, beaten
2 tbsp. water
Fine dry bread crumbs

Heat butter in saucepan. Add onions, cook until soft. Blend in flour. Add broth or milk. Salt and pepper. Stir constantly until thick. Combine chicken. Chill well. Shape into croquettes.

Combine egg and water. Dip croquettes in egg mixture, coat with bread crumbs. Heat shortening 3 inches deep in fryer to 375 degrees. Fry 3-5 minutes or until brown. Drain on absorbent paper. Serve with a mushroom sauce.
