CHICKEN DUMPLINGS 
1 tbsp. roux
1/2 chicken, cut up
1 med. onion, chopped
1/4 c. celery, chopped
1/4 c. bell pepper, chopped
1/4 c. cooking oil
1 clove garlic
Salt, red pepper and black pepper to taste
1 qt. water

Season chicken to taste. Brown chicken in oil (fry well). Add onion, celery, bell pepper, garlic and saute. Add 1 tablespoon roux and 1 quart water, and let boil for 10 to 15 minutes until chicken is cooked.

DUMPLINGS:

2 c. flour
1 1/4 tsp. baking powder
1/4 tsp. baking soda
1 c. water
1 egg
1/2 c. onion, chopped
1/2 c. onion tops, chopped
1/4 c. bell pepper, chopped
1 tsp. garlic salt
1 sm. Jalapeno pepper, chopped fine
Season to taste with salt, red pepper and black pepper

Mix all ingredients in a mixing bowl. Drop 1 tablespoon of batter mix, one at a time in boiling chicken sauce. Once all dumplings are dropped in boiling chicken sauce, lower fire and let cook for 5 minutes.
