RICH LEMON MUFFINS 
2 c. flour
1/2 c. plus 2 tbsp. sugar
1 tbsp. baking power
1 tsp. salt
1/2 c. butter
1/2 c. lemon juice
2 eggs
Finely grated rind of 1 lemon

Heat oven to 400 degrees. Grease muffin tins. Combine flour, 1/2 cup sugar, baking powder and salt. Blend well. Melt butter, off heat, stir in lemon juice, eggs, and rind. Stir egg mixture into dry ingredients and blend until well moistened. Spoon into muffin tins. Sprinkle the tops of the 12 muffins with the 2 tablespoons of sugar. Bake 15-20 minutes until lightly browned.
