CHICKEN AND ARTICHOKE SALAD 
8 whole chicken breasts (cook and dice)
1 box UNCLE BEN'S® long grain and wild rice (cook according to directions on box)
2 jars marinated artichoke hearts
3 green onions, chopped
1 med. green pepper, chopped
1/2 c. stuffed olives, diced
2 tsp. curry powder
Mayonnaise

Combine all ingredients, even juice from artichoke hearts. Start with 2 tablespoons mayonnaise, add more should be green and pretty. NOTE: Maria says this can be served on a lettuce leaf and is delicious with a Jello salad served as a complimentary dish.
