CHICKEN CACCIATORE | |
2 lbs. chicken parts 1/4 c. seasoned flour 1/4 c. olive oil 8 sm. white onions 1 med. green pepper, cut in strips 1 (4 oz.) can sliced mushrooms 1 clove garlic 1 can (10 1/2 oz.) tomato soup 1/2 c. water 2 tbsp. vinegar or lemon juice 1 tbsp. Worcestershire sauce 1/2 tsp. leaf thyme Dust chicken with seasoned flour. Brown chicken in olive oil, remove. Add onions, green pepper, mushrooms and garlic; brown lightly. Blend in remaining ingredients; add chicken. Cover, simmer about 30 minutes, stir often. |
