ZUCCHINI ITALIANO 
4 c. thinly sliced zucchini
1 sm. onion, sliced thin
1 med. carrot, shredded
1 tbsp. butter
3/4 tsp. Italian seasoning
1/2 tsp. salt
1/8 tsp. garlic powder

Combine zucchini, onion and carrot in 1 1/2 quart microwave-safe casserole. Cover with casserole lid.

Microwave (high) 4 to 6 minutes or until tender, stirring once. Drain. Dot with butter; sprinkle with Italian seasoning, salt, and garlic powder. Toss lightly.

Italian seasonings give zip to this combination of zucchini, onion and carrots.

Since microwave ovens vary in power, you may need to adjust your cooking time.
