4 c. thinly sliced zucchini 1 sm. onion, sliced thin 1 med. carrot, shredded 1 tbsp. butter 3/4 tsp. Italian seasoning 1/2 tsp. salt 1/8 tsp. garlic powder Combine zucchini, onion and carrot in 1 1/2 quart microwave-safe casserole. Cover with casserole lid. Microwave (high) 4 to 6 minutes or until tender, stirring once. Drain. Dot with butter; sprinkle with Italian seasoning, salt, and garlic powder. Toss lightly. Italian seasonings give zip to this combination of zucchini, onion and carrots. |
