YANKEE DOODLE CASSEROLE 
8 oz. med. wide noodles
1 tbsp. butter or marg.
1 1/2 lb. ground beef
1 1/4 tsp. salt
1/4 tsp. pepper
16 oz. can tomato sauce
1 c. cottage cheese
1 c. sour cream
6 scallions chopped
3/4 c. shredded Cheddar cheese

Cook noodles and drain. Brown meat in butter. Drain off fat. Add seasonings and tomato sauce. Simmer 5 minutes. Remove from heat. Combine cottage cheese, sour cream, onions and noodles. Alternate noodles and meat mixture in casserole, beginning and ending with meat. Top with Cheddar cheese. Bake.

Yields 6 to 8.
