SPAM AND NOODLE CASSEROLE 
We love this recipe and make it all the time. It's so good, easy, and cheap! Tastes great hot or cold and keeps really well. Some keys to it that make a big difference is you want to use egg noodles or a really firm noodle to support the sauce, and you want to use a good deal of butter when sautéing the vegetables. Other than that I play around with the recipe all the time adding other stuff or using other soups. I never liked spam before now I eat it all the time. Enjoy!

1 pkg. egg noodles (I like Dutch)
1 large onion
3 large celery stalks
4 tbsp. (1/2 stick) butter
salt and pepper, to taste
1 can Spam, chopped or diced
1 (10 oz.) can condensed cream of chicken soup
1 (10 oz.) can condensed cream of mushroom soup

Cook noodles in separate pan. Chop or dice and sauté onion and celery in good amount of butter on medium-high heat, adding salt and seasonings as you like. When its just about done add chopped or diced Spam, cooking all-together a few minutes. Add both cans of condensed soup and cook a few more minutes.

Drain cooked but firm noodles and put them in a casserole dish, then pour spam/veg/soup mixture on top. Bake at 300°F for 45 minutes or so.
