CHOCOLATE COCONUT MACROONS 
4 egg white
3 1/2 oz. coconut, shredded
2 tbsp. cocoa
1 c. sugar

Preheat oven to 350 degrees. Line cookie sheet with parchment sheet or foil. In a large bowl beat egg whites until stiff peaks. Slowly add sugar. In a small bowl, combine coconut and cocoa. Fold into egg whites. Drop by 1/2 teaspoon onto cookie sheet; bake 25 minutes. Transfer cookies still on sheet to wire racks to cool. Makes 6 dozen.
