POPPY CHICKEN CASSEROLE 
1 whole chicken, boiled and boned
1 c. sour cream
1 can cream of mushroom or cream of chicken soup
1 1/2 pkgs. Ritz crackers
1 stick butter
2 tbsp. poppy seeds

Layer chicken in bottom of ovenproof casserole dish. Mix sour cream and soup. Spread over chicken. Crush crackers and sprinkle over soup. Melt butter and pour over crackers. Sprinkle poppy seeds over top. Bake in preheated 350 degree oven for 30 minutes. Serves 6.
