MOTHER'S SOUTHERN DRESSING 
1 med. chicken or hen
1 1/2 qt. broth from boiling hen
2 tsp. season salt
2 pans cornbread
4 slices light bread
2 tsp. sage
2 tsp. black pepper
1/2-1 onion, chopped
5 boiled eggs, chopped
Broth to taste

Cut up and boil hen until tender and remove from bones. Reserve broth. Season and cook hen in enough water to have at least 1 1/2 quarts broth. In large baking pan combine cornbread, chicken, chicken broth, light bread, sage, pepper, onion and boiled eggs; mix all ingredients well. Add enough chicken broth to the mixture to be moist before baking. Bake at 400 degrees for about 30 to 40 minutes.

This is closer to my mom's dressing, I wanted to try something new and it turned out good. I like that it doesn't use raw egg (I never have) like many recipes do; I like dressing with lighter texture. For mine I add 2-3 cups celery and use poultry seasoning (a lot) instead of sage. I don't add bread, either. I liked this recipe as a change of pace from my own, but still similar.
