MOTHER'S SOUTHERN DRESSING | |
1 med. chicken or hen 1 1/2 qt. broth from boiling hen 2 tsp. season salt 2 pans cornbread 4 slices light bread 2 tsp. sage 2 tsp. black pepper 1/2-1 onion, chopped 5 boiled eggs, chopped Broth to taste Cut up and boil hen until tender and remove from bones. Reserve broth. Season and cook hen in enough water to have at least 1 1/2 quarts broth. In large baking pan combine cornbread, chicken, chicken broth, light bread, sage, pepper, onion and boiled eggs; mix all ingredients well. Add enough chicken broth to the mixture to be moist before baking. Bake at 400 degrees for about 30 to 40 minutes. |
