SURPRISE SALAD RELISH 
2 c. well-drained sauerkraut
2 c. sliced carrots
1 c. diced celery
1 c. diced green pepper
3/4 c. sugar
1/2 c. chopped onion
1/3 c. white vinegar
1/4 c. chopped pimento
1 tbsp. salt
Pepper to taste

In medium bowl, combine sauerkraut with remaining ingredients. Cover and refrigerate at least 4 hours.
