VIDALIA ONION RELISH 
3 to 4 Vidalia onions, thinly sliced in processor

MARINADE:

1 c. sugar
1/2 c. red wine (or cider) vinegar

DRESSING:

1/2 c. good quality mayonnaise
1 tsp. celery salt

Marinate onions at least 2 hours in refrigerator. Drain well and mix with dressing. May chop onions for easier serving.

Serve as hors d'oeuvres on saltines or as a substitute for slaw. MUST USE SWEET ONIONS.
