ORANGE COCONUT CAKE 
1 1/2 c. sugar
1 stick butter
4 eggs
Grated rind of 2 oranges
2 1/2 c. self-rising flour
1/2 c. milk

Cream together sugar and butter. Add eggs, orange rind, flour, and milk. Beat well. Bake at 350 degrees.

FILLING:

2 c. milk
1 tbsp. flour
2 c. sugar
2 egg whites
1 whole coconut, grated or 2 pkgs. frozen coconut

Combine milk, flour, and sugar. Boil 12 to 15 minutes. Add coconut. Bring to a rolling boil. Beat egg whites. Pour filling into egg whites and beat.

Note: May use orange supreme cake mix for the cake.
