ORANGE COCONUT CAKE 
2 1/2 c. flour
2 c. sugar
3 tsp. baking powder
1/2 c. shortening
1/2 c. butter
1 tsp. salt
1 c. milk
8 oz. coconut
4 eggs

ICING:

2 unbeaten egg whites
1 1/2 c. sugar
1/2 tsp. cream of tartar
2 tsp. vanilla
1/2 c. boiling water

Mix dry ingredients together. Add shortening, butter and milk gradually. Beat well. Add 1 egg at a time, beating well after each. Pour into 4 (8") greased and floured cake pans.

Bake in preheated 400 degree oven for 20 minutes or until top springs back. Let cool in pan 10 minutes.

Grate 2 oranges and add 2 tablespoons sugar. Put orange mixture on cake. Put icing next, then add coconut and layer.

ICING: Mix egg whites, sugar, cream of tartar and vanilla in a deep bowl. Add boiling water. Beat to stiff peaks. Spread between layers and on top and sides of cake.
