PEANUT BUTTER PIE 
1 c. brown sugar, firmly packed
4 1/2 tbsp. flour
2 c. milk, scalded
2 tbsp. butter
2 eggs, separated
1/2 tsp. vanilla
1/4 c. peanut butter
Pinch of salt

Blend brown sugar and flour thoroughly in saucepan. Add scalded milk and stir until smooth. Add butter and salt. Heat to boiling, reduce heat and cook slowly over direct heat 5 minutes longer, stirring constantly.

Remove from heat and slowly stir part of the hot mixture into the well beaten egg yolks. (Reserve whites for meringue.) Return to pan and cook minutes longer, stirring constantly. Remove from heat, add vanilla and 1/4 cup peanut butter and stir until peanut butter is blended well. Pour into a cooled baked pie shell. Top with meringue and bake at 350 degrees until nicely browned.
