SUPER SPINACH SALAD 
4 slices bacon, cooked until crisp
1 bunch spinach, washed & cut to bite size
1 1/2 c. fresh bean sprouts
6 lg. mushrooms, sliced
1/2 c. sliced water chestnuts
2 hard boiled eggs, chopped
1/4 c. dry-roasted sunflower seeds

Combine and add dressing. Toss well. Garnish with crumbled bacon. From "Bon Appetit".

DRESSING:

1/2 c. vegetable oil
1/2 onion, cut in 1 inch chunks
1/4 c. brown sugar, packed
1/4 c. red wine vinegar
2 tbsp. catsup
1 tsp. Worcestershire sauce
1 tsp. dry mustard

Blend all ingredients in blender until smooth.
