CHICKEN PICCATA 
3/4 c. flour
1/2 tsp. oregano
1/4 tsp. salt
1/4 tsp. black pepper
1 lb. chicken breasts, boned, skinned & halved
All Natural PAM no stick cooking spray
2 cloves garlic, minced
1/4 c. white wine
1/4 c. unsalted chicken broth
1/4 c. water
1 lemon, sliced
Parsley to garnish

Combine flour, oregano, salt and pepper. Dredge chicken through flour combination. Spray a large skillet with PAM for about 3 seconds. Saute garlic. Add chicken and brown on both sides. Add wine, chicken broth and water. Cook over medium heat until chicken is done, about 15 minutes. Add lemon slices during lat 5 minutes of cooking. Garnish with parsley. Serve with vegetables stir-fried in PAM. Yield: 4 servings.
