CHICKEN PICCATA | |
4 chicken breast halves 1 egg 1 tbsp. lemon juice 1/4 c. flour 1/8 tsp. garlic powder & paprika Dash of white pepper 1/4 c. butter 1 tsp. granulated chicken bouillon 3/4 c. boiling water Beat egg with lemon juice. Combine flour, garlic powder, paprika and pepper. Dip chicken (that is skinned and deboned) in egg mixture, then flour mixture. In skillet brown chicken in butter. Dissolve bouillon in water and pour over chicken. Cover and simmer 15 to 20 minutes. Tasty Variation: Add fresh sliced mushrooms before simmering. |
