CHOCOLATE FILLED CUPCAKES 
2 eggs
2 c. sugar
2 tsp. vanilla
2 c. cold water
2 tsp. vinegar
1 c. salad oil
3 c. flour
1/2 c. cocoa
2 tsp. baking soda
1 tsp. salt

Beat eggs and sugar. Add vanilla, water, vinegar and oil. Sift flour, cocoa, baking soda and salt together and add to above. Beat well, fill baking cups half full, then drop 1 teaspoon filling into each one. Bake at 350 degrees for 20-25 minutes. Makes 4 dozen cupcakes.

FILLING:

8 oz. cream cheese (softened)
1 egg
1 c. sugar
1/8 tsp. salt
1 c. chocolate bits
1 c. coconut
