YAM PUDDING 
1/2 c. sugar
1/2 c. unsulphured molasses
1/3 c. butter, melted
1 tsp. nutmeg
1 tsp. cinnamon
1/2 tsp. salt
3 eggs, beaten
1 1/2 c. milk
4 c. peeled and grated raw yams

Combine sugar, molasses, butter, spices and salt. Add eggs and milk. Stir in yams, mixing thoroughly. Pour into greased 1 1/2 quart casserole. Bake in moderate 350 degree oven for 1 1/2 hours. Serve warm or cold with cream.
