FRESH APPLE CAKE 
3 c. flour
1 tsp. baking soda
1 tsp. salt
1 1/2 c. vegetable oil
2 c. sugar
3 lg. eggs
2 tsp. vanilla
1 1/4 c. chopped pecans
2 c. fresh apples (finely chopped)
1 tsp. apple pie spice or cinnamon (optional)

Sift flour, soda and salt. Add oil, eggs (one at a time), sugar and beat until mixed. Dough will be stiff. Add apples, nut, vanilla and apple spice if desired. Grease and flour tube or bundt pan. Bake 1 hour and 20 minutes at 325 degrees. Cool.
