FRESH APPLE CAKE 
3 eggs, beaten
1 c. vegetable oil
2 c. sugar
3 c. self-rising flour
1 tsp. baking soda
1 tsp. salt
1 tsp. apple pie spice
3 c. sliced apples with peelings
1/2 c. nuts
1/2 c. raisins (if desired)

Mix together all cake ingredients except nuts. Dust nuts with flour and fold in. Bake at 350 degrees for 45 minutes in 9 x 13 inch pan or a Bundt pan. You can make a glaze if you like, we like it without.
